Pomegranate Chicken and Rosemary Potatoes Recipe #SfSmarties

 
 

Tired of the same boring chicken recipe night after night? Spice it up this week with our healthy pomegranate chicken. The chicken has a sweet flavor that most children will find very desirable. We kept the recipe simple, so it can easily be a great week night family meal.

Pomegranate Chicken

Ingredients:

 
Directions:

 

 
First add 2 Tbl. of olive oil, shallot, and rosemary into a sauce pan.

 

 
Cook for 2-3 minutes on high. 

 

 
Next add 1 cup of pomegranate juice, 1/4 cup of agave nectar, and 2 Tbl. of red wine. Cook on medium heat, while stirring occasionally for 30 minutes. The sauce will begin in thicken, and reduce in size.

 

 
While the sauce is thickening, begin to prepare your chicken. First Street chicken (value pack), drumsticks or thighs are going to be on sale for $.99lb. starting on April 18th through the 24th.

 

 
Remove any skin/fat from the chicken thighs.

 

 
Then season the chicken with salt and pepper.

 

 
Heat 2 Tbl. of olive oil in a large sauce pan.

 

 
Add the chicken to the sauce pan, and cook for about 15 minutes on each side (or until the chicken is fully cooked)

 

 
Next you will want to drain all the fat from the chicken that is in your sauce pan. 

 

 
Add 2 Tbl. of butter to the sauce. Wait until the butter fully melts, and pour the sauce over the chicken.

 

 
Simmer for about 5 minutes, and then serve!

 
Rosemary Potatoes

 
Ingredients:

Wash the potatoes well.

 

 
Dice the potatoes in the quarters.

 

 
Add the olive oil, and spices. 

 

 
Mix well. 

 

 
Bake on a foil lined cookie sheet at 450 degrees for 25-30 minutes.
